Domaine Amiot-Servelle traces its origin back to the 1920s with Clément Tachot.  He ran the estate for 30 years.  Back then, he was farming only a few plots in Chambolle-Musigny and making just a few bottles of wine. In the 50s, his daughter, Cécile Tachot, and her husband, Jean Servelle, took over. Then, the domaine was called Servelle-Tachot. In 1980 Christian Amiot, son of Pierre Amiot from Morey-St-Denis and also from a winemaking family, started working with his wife Elisabeth Servelle, the daughter of Cécile Tachot and Jean Servelle.  In 1989, Jean Servelle passed away and the domaine became Domaine Amiot-Servelle.

The year 2020 marks a new milestone for this domaine as Christian and Elisabeth passed the management to the next generation: Prune and Antoine Amiot-Servelle, brother and sister. This is a dream team, Prune obtained her oenology diploma in 2004. Then, she travelled in France and abroad to acquire vineyard and winemaking experience. She came back to work with her parents at the domaine in 2011. Antoine graduated with an MSc in Wine Management from the Burgundy School of Business.  After acquiring another degree in winemaking and viticulture, Antoine returned to the family domaine in 2017.  Now, he is learning the secrets of the family wines from his sister, so he can help with continuing to make the best from their beautiful vineyard holdings. Currently, Prune and Antoine are managing the domaine side by side with both of them involved in all steps of the process from the vineyard to the bottle. In fact, you may have met them in Hong-Kong during our 2018 Fine Wine Experience Burghound Symposium.

In terms of the size of this domaine, since 2010, after acquiring a few plots from Christian’s family amounting to 1 hectare, the domaine has comprised 8 hectares.  The additional plots they acquired are the following:  Morey-Saint-Denis and Clos-Saint-Denis (.17ha) and Charmes Chambertin (.19ha). Now, they have three flagship plots – Clos-Saint-Denis, Charmes Chambertin and Chambolle-Musigny 1er Cru ‘Les Amoureuses’ (.45ha).

Since 2003 all the vineyards have been farmed with organic practices, and in 2008 they obtained organic certification. The aim at Domaine Amiot-Servelle is to treat the vineyard with respect to obtain fruit of incredible quality. The high proportion of limestone in the soils in their plots delivers minerally driven, elegantly fragrant wines (though Derrière-la-Grange is more masculine in style and is a specialty of the domaine).

When it comes to harvesting, they pick the grapes with full phenolic ripeness  At the winery the grapes are sorted before being put into temperature-controlled vats.  Then, Prune will do pumping over and punching down as she deems appropriate for the vintage.  In addition, she may include whole cluster berries depending on the quality of the fruit and stems. 

Regarding the use of oak at Domaine Amiot-Serville, the bourgogne receives 20% new oak, the village wines see 30% new oak, and the premiers crus and grands crus receive 50% new oak.  All the wines are aged in barrel for 18 months with one or two rackings, if necessary. 

This family domaine produces just a limited amount of bottles.  In a normal year (in terms of yield), they will make two barrels of each of the grands crus with a few more barrels made of the premiers crus and village wines. The style of wine produced here can be enjoyed young or will age well in your cellar.
