Perched on the prime slope above Givry, in Burgundy’s Côte Chalonnaise, Domaine du Cellier aux Moines was established by Cistercian monks in 1130, is one of the oldest domaines in Burgundy! This winemaking team led by Guillaume Marko, and shifted from traditional methods to biodynamic practices since 2006 in order to provide the environment, produce vibrant grapes, and sustain nature’s delicate balance. The process starts with hand-harvested, carefully sorted grapes, ensuring precision at every step. Fermentation takes place in whole bunches in a state-of-the-art gravity-fed facility, set in a naturally cooled quarry. The result?
