Although Domaine Hubert Lamy is only established in 1973, the Lamy family has been tending vines in Saint-Aubin, Burgundy, since 1640. Today, the domaine encompasses vineyards spread across 4 villages in the Côte de Beaune - Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet, and Santenay. At its core, is passionate winemaker, Olivier Lamy, who joined his father since 1995 after previously working at Méo-Camuzet.

The Domaine nowadays covers 18.5ha of vineyards, with 85% dedicated to Chardonnay and 15% to Pinot Noir. Facing either south or southeast, these vineyards sit on stony clay-limestone soils with shallow top soil (10-30cm). Olivier treat his vineyards with respect of nature, ploughing with winch on steep slopes, Guyot pruning, manual harvest and prioritising in organic inputs. Each task at every stage of vinification is geared towards achieving concentration and balance. At the Domaine, each plot is vinified and aged separately in order to retains the character of its terroir. The grapes are crushed and then slowly pressed in a pneumatic press. The juice is lightly settled and then transferred to 350-liter barrels or 600-liter demi-maids for fermentation, Olivier uses large barrel in order to imparts less oak flavours into the wine but will bring a rounder texture. Limited SO² is added during the process. Bottling takes place after 24 months of aging. Their Chardonnays are tense and elegant, faithfully expressing the characteristics of their terroir.

Domaine Hubert Lamy is the specialist in Saint-Aubin, a village that is often overlooked and falls in the shadows of its neighbouring big name villages of Chassagne-Montrachet and Puligny-Montrachet. Yet, their wines are proof of the capability for outstanding wine production in Saint-Aubin. Top of their range includes Saint-Aubin 1er Cru "En Remilly", and Saint-Aubin 1er Cru “Clos de la Chatenière”, which comes from a small 1.25ha clos vineyard planted in 1964, so they are very old vines, and a great starting point to explore. Saint-Aubin 1er Cru "Derrière Chez Edouard" is an extra special cuvée because it originates from a vineyard planted at an incredibly high density (30,000 vines/ ha). This distinct characteristic imparts an uncommon density and vitality to the wine, surpassing the norm for Saint-Aubin 1er Cru’s level.
