Based in Polisot, Paul-Bastien is one of the Cote des Bars most exciting talents. He took over some family vines and started building his winery in 2017. Paul-Bastien is a man of detail and despite having potentially more vines to work from, he wanted to focus his attention on one site above his winery in Polisot first (his Chevry cuvée) before working the remaining of the family holdings in Les Riceys and Montgueux.
“One plot, one grape varietal, one vintage”, his motto is a clear statement on his winemaking philosophy. His wines are full of tension, energy with a high level of precision.
